Easy Squeezy

I promised my sister I would contine to post easy & yummy recipes as I make them. Well, this is only my 2nd post per that promise, so expect more to come.

In addition, most receipes are not mine per se, but come from food network, rachel ray, real simple or costco mostly. I mean, come on, it's not the 1950's...I don't make up my own dinners :)

Balsamic Chicken with tomato reduction

• 2-4 chicken breasts
• 1 can diced tomatos (I use Red Gold diced with basil, garlic & oregano)
• balsamic vinegar

Spray a glass baking dish with pam and place chicken in dish, not overlapping. Pour/drizzle balsamic vinegar to coat. (I use alot, but I like vinegar and it keeps the chicken moist-it is dark then, scary, but yummy-so test out your fav amount!). Bake on 350 for 20-25 minutes, or until chicken is cooked to your liking. Pour diced tomatos into medium skillet, put a few dashes of balsamic vinegar and cook until reduced, approx. 20 min on medium heat. (if I buy the basic no salt added diced tomatos, I include garlic and seasoning into the tomatos in the skillet).

That's it! Once the chicken is done, plate and pour tomato reduction over the top. It does make for nice presentation, if I do say so myself. I usually serve with grilled asparagus. If you are craving some carbs as part of that meal, make quinoa and add some italian seasoning as it is cooking and some garlic to flavor it up.

I will take some credit for this concoction as I went to make it from a costco cookbook (a-ma-zing) and didn't have chicken stock, fresh garlic and something else. So I improvised and it is so easy squeezy.

And, somewhat healthy, right?

Green is the New Black

Happy St. Patty's Day! We all enjoyed a fun night at Mudsocks with our friends. I think the final count of empty cups (Joel insisted on making a tour) was more than 70. Good work boys.

Our Waitress :) We stole this tray and continued to be able to serve our table 14 green beers at a time. Nice.

That is us, waiting for the bus to take us to the airport on the last day of our honeymoon. I was excited to come home, actually, after 10 days in the sun and living out of a suitcase. Oh-I mean I was happy to come home as Mrs. Glenn and start our new life together :)

am i that old neighbor lady?

I would like to begin this post saying that I do love kids. I really do. Just ask Jack & Reagan :) I even want 4 of them. Yep, you read that right...4.

But, for some reason, the transition from condo living (where everyone was between 25-45 and pretty much kept to themselves) to suburban neighborhood living has been slightly annoying at times.

Saying that kids are everywhere is an understatement. But, let's get to today's story.

Our yard backs up to a court, so lots of other back yards. None of our immediate neighbors have fences....leaving a football/soccer/baseball field. I get home from work today and I am upstairs changing into workout clothes. I can hear the kids in the backyard and look out. Normally they are playing games or soccer (no big deal) but today they were trying to lift the grate off of the storm drain at the corner of our yard. Yes, the grate off the storm drain. Apparently I watched too much Rescue 911 because all I could picture was one of them falling in.

Now...onto the old neighbor lady part. Apparently their parents weren't out on their decks (I couldn't tell from my bedroom window) so I went downstairs, out onto the deck to see if they would notice me. They did and I said the "Did you guys drop something into the drain line?" a quick and slightly scared "No" was the response. But, they continued (the one little girl in the group too-bullies!) to try to pick up the grate cover. And then came the "You kids should not be playing with the drain, it is heavy and you could fall in. It is not safe." Yep-blank stares in response. But, they did leave it alone and go play soccer :)

Now that is it warm, it is crazy around the neighborhood-I hope I don't get the reputation of crotchety old neighbor lady :)

My poor kids don't stand a chance!! We can't get a fence fast enough!

Green Goodness

is right...yum-o!

I do love the color green, but as my family knows, not necessarily green food. I am getting way better about the green food if I do say so myself, but picking up a green drink at kroger? Now, that is a huge step!

It just so happens I hate taking vitamins (yuck!) if they aren't gummy or chewable...so imagine my excitement when David pointed out the Green Goodness smoothie last night!

Now, I could take a one-a-day vitamin and get 50% of my daily Vitamin A needs, or I can drink a serving of Green Goodness and get a whopping 120%! The same goes for Vitamin C (not a huge difference): vitamin=100%, Green Goodness=105%. And Zinc: vitamin=100%, Green Goodness=120%.

It also has no preservatives, is gluten free, is 100% juice and has no sugar added.

I am sure the vitamin offers lots of other things above and beyond what the Green Goodness can offer (it is created in a lab after all), but since I don't take those-this is a step in the right direction!

Child Labor Laws

I know I wrote about Jack "working" at Kipp while they were in town, but I am just now posting my favorite pictures of Jack that day.

this is Uncle David pushing Jack down the conveyor belt just like an order of toys. Jack wasn't so sure, but he found the courage once Aunt Sara showed up and went into the warehouse with him. If only he would have let us push him up the big hill at the end-that would have been fun :)

Pink Tie Ball

Last night, David, Bob and I went to the Pink Tie Ball. This event it Komen's black tie event.

As if having our Kickoff Celebration last Thursday wasn't exhausting enough-I took a quick (and I mean quick) trip to Florida to stay with Erin & Keven for the weekend. David was already there (he flew in on Tuesday for a conference) so it was hard to say no, even though I knew I would need starbucks to get through the day on Friday!! DARN!

A big thanks to Erin & Keven for hosting such a fun weekend. Erin was all concerned with it being "Florida" enough. I was just happy to see the sun, I didn't need to beach it . . . it's not like I would have gotten tan, please come on.

We went to Margaritaville on Friday night and then to the Red Coconut Club to see Keven & Steven's band play. The people watching was amazing. We were able to sleep in on Saturday (awesome), eat outside at a cute cafe (double awesome) and even find more time in the afternoon to lay back down (triple awesome!). Then it was off to a hole-in-the-wall mexican place with Erin's friends (Keven had another gig that night) and then to cosmic bowling.
So, all day on Saturday I was totally feeling the bowling. I kept telling David that I was "feeling good" about my game. Well....I did WIN the first game!! Then, onto the second game David comes out of nowhere to kick all of our butts. The bet must have been worth it - the loser has to drive the Scotty's so the other one can enjoy some beverages. boo.

An all around fun weekend!! Thanks guys!
